Description

This Cheddar Bay Biscuit Taco Casserole combines delicious taco flavors with a scrumptious biscuit topping.


Ingredients

  • 1 box Red Lobster Cheddar Bay Biscuit Mix (including the seasoning packet)
  • 3/4 cup cold water (for biscuit mix)
  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 packet taco seasoning
  • 1/4 cup water (for taco seasoning)
  • 14 ounce can fire-roasted diced tomatoes, drained
  • 4 ounce can diced green chilies, undrained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cups shredded Colby Jack cheese (divided use)
  • 1 teaspoon dried parsley flakes (for topping, optional)

Instructions

  1. Preheat the oven to 375°F. Lightly spray a 9×13-inch casserole dish with nonstick cooking spray.
  2. In a medium bowl, prepare the biscuit dough by combining the Red Lobster Cheddar Bay Biscuit Mix and cold water. Mix until just combined. Spread the dough evenly across the bottom of the prepared casserole dish. If too sticky, spray your hands with a little cooking spray and spread it out.
  3. Bake for 5-8 minutes, just until the dough is set. Remove from oven and set aside.
  4. In a large skillet over medium heat, cook ground beef with diced onion, breaking up the meat as it cooks. Drain any excess grease if needed.
  5. Stir in taco seasoning, 1/4 cup water, fire-roasted diced tomatoes, and diced green chilies. Let the mixture simmer for 2-3 minutes, stirring occasionally.
  6. Spread the beef mixture evenly over the partially baked biscuit layer in the casserole dish.
  7. In a small bowl, combine mayonnaise, sour cream, and 1 cup shredded Colby Jack cheese. Spread this mixture evenly over the beef layer.
  8. Sprinkle the remaining 1 cup shredded Colby Jack cheese over the top.
  9. Bake the casserole for 30 minutes, or until the top is melted and bubbly. Remove from the oven and let cool for 5 minutes.
  10. Garnish with dried parsley flakes before serving.

Notes

  • The remaining dough can be used for making biscuits on the side if desired.
  • Make sure to drain the diced tomatoes thoroughly to avoid excess moisture.
