Description

Delicious and colorful church window cookies made with chocolate, marshmallows, and coconut.


Ingredients

  • 12 oz semi-sweet chocolate chips
  • 12 tsp vanilla extract
  • 1 pinch salt
  • 10 oz rainbow colored miniature marshmallows
  • 2 cups shredded sweetened coconut
  • ½ cup confectioners sugar (optional coating)
  • ¼ cup chopped or crushed nuts (optional – walnuts, pecans, or almonds)

Instructions

  1. Combine ½ cup butter and 12 oz semi-sweet chocolate chips in a bowl. Microwave in 30-second increments (or use a double boiler over low heat) until mostly melted. Stir until completely smooth to avoid overheating.
  2. Let the mixture sit for 5–10 minutes, stirring occasionally. It should feel near room temperature before proceeding so the marshmallows don’t melt.
  3. Stir in the 1-2 tsp vanilla extract and 1 pinch salt until smooth. Gently fold in the 10 oz rainbow colored miniature marshmallows (plus optional ¼ cup chopped or crushed nuts) until every piece is evenly coated in chocolate.
  4. Lay out two long sheets of parchment paper. Spread a center line of 2 cups shredded sweetened coconut (or optional ½ cup confectioners sugar) down the middle of each sheet.
  5. Spoon half of the mixture onto the coconut line of each sheet. Sprinkle the remaining coconut over the tops.
  6. Use the parchment paper to roll and press the mixture into two tight, even cylinders (about 2 inches in diameter). Twist the ends of the paper to seal.
  7. Refrigerate the logs for at least 4 hours to ensure they are fully set, easy to handle, and will slice best.
  8. For the best results, unwrap the logs and use a clean, sharp knife to slice into rounds between ¼ and ½ inch thick.
  9. Enjoy your church window cookies while chilled. They can typically stay at room temperature for 2–4 hours before the chocolate softens.
