- 1 medium Yellow onion (Diced)
- 4 cloves Garlic (Minced)

- 3 medium Yukon Gold potatoes (Peeled and diced)
- 4 cups Low-sodium chicken broth
- 1 cup Half-and-half (Can substitute with dairy-free options)
- 2 cups Kale (Chopped)
- 1 teaspoon Kosher salt (Adjust to taste)
- 1 teaspoon Black pepper (Adjust to taste)
- 1/2 cup Parmesan cheese (Grated, optional for serving)
- 1 tablespoon Lemon juice (Optional)
- 1/4 cup Chopped parsley (For garnish)
Instructions
- Heat a large Dutch oven over medium heat and add the Italian sausage. Brown and break it up for about 6-7 minutes until fully cooked. Drain excess fat, leaving about 1 tablespoon for flavor.
- Add the diced yellow onion with a pinch of salt and sauté for 4-5 minutes until softened. Stir in the minced garlic and red pepper flakes, cooking for an additional 30 seconds until fragrant.
- Mix in the peeled and diced Yukon Gold potatoes, then pour in the low-sodium chicken broth. Season with 1 teaspoon kosher salt and black pepper. Bring to a boil, then reduce to a simmer for 12-15 minutes until the potatoes are tender.
- Lower the heat, add half-and-half gently without boiling. Fold in the chopped kale, cooking for 2-3 minutes until it wilts but retains its vibrant color.
- Remove from heat and stir in Parmesan and lemon juice (if using), adjusting seasonings to your liking. Serve hot with a sprinkle of extra Parmesan and chopped parsley for garnish.
