Ingredients

  • 1 pound Italian sausage (Mild or hot, based on preference)
  • 1 tablespoon Olive oil (For browning the sausage)
  • 1 medium Yellow onion (Diced)
  • 4 cloves Garlic (Minced)
  • 1 teaspoon Red pepper flakes (Adjust to taste)
  • 3 medium Yukon Gold potatoes (Peeled and diced)
  • 4 cups Low-sodium chicken broth
  • 1 cup Half-and-half (Can substitute with dairy-free options)
  • 2 cups Kale (Chopped)
  • 1 teaspoon Kosher salt (Adjust to taste)
  • 1 teaspoon Black pepper (Adjust to taste)
  • 1/2 cup Parmesan cheese (Grated, optional for serving)
  • 1 tablespoon Lemon juice (Optional)
  • 1/4 cup Chopped parsley (For garnish)

Instructions

  1. Heat a large Dutch oven over medium heat and add the Italian sausage. Brown and break it up for about 6-7 minutes until fully cooked. Drain excess fat, leaving about 1 tablespoon for flavor.
  2. Add the diced yellow onion with a pinch of salt and sauté for 4-5 minutes until softened. Stir in the minced garlic and red pepper flakes, cooking for an additional 30 seconds until fragrant.
  3. Mix in the peeled and diced Yukon Gold potatoes, then pour in the low-sodium chicken broth. Season with 1 teaspoon kosher salt and black pepper. Bring to a boil, then reduce to a simmer for 12-15 minutes until the potatoes are tender.
  4. Lower the heat, add half-and-half gently without boiling. Fold in the chopped kale, cooking for 2-3 minutes until it wilts but retains its vibrant color.
  5. Remove from heat and stir in Parmesan and lemon juice (if using), adjusting seasonings to your liking. Serve hot with a sprinkle of extra Parmesan and chopped parsley for garnish.
