Description

Delicious chicken sausage fajitas loaded with colorful bell peppers, perfect for a quick meal.


Ingredients

Scale
  • 1 pk al fresco Mexican style chicken sausage
  • 3 bell peppers, (cut lengthwise)
  • 1 red onion, (cut in wedges)
  • 1 tbsp olive oil
  • 1 tsp chili
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp cumin
  • 1 pinch salt and pepper, (to taste)

Instructions

  1. Pre-heat oven to 400F degrees. Line a large sheet pan with parchment paper.
  2. Place sliced peppers, red onion wedges and chicken sausage in sheet pan. Drizzle with olive oil and season with chili, paprika, oregano, cumin, salt and pepper. Toss to combine.
  3. Bake for 20 minutes or until peppers are cooked and chicken sausage has heated through.
  4. Serve these chicken sausage fajitas with guacamole, rice, beans, tortillas, sour cream.

Notes

  • For extra flavor, marinate the chicken sausage in spices for a few hours before cooking.
  • Feel free to add additional vegetables like zucchini or mushrooms.
