Garlic Butter Shrimp with Bok Choy

Description

Delicious garlic butter shrimp paired with tender bok choy and vibrant bell peppers.


Ingredients

Scale
  • 1/4 cup low-sodium soy sauce or tamari
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 lb large raw shrimp, peeled and deveined (tail-on or off)
  • 45 heads baby bok choy, ends trimmed and halved lengthwise
  • 1 medium red bell pepper, sliced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Sesame seeds and sliced green onions, for garnish

Instructions

  1. Preheat oven to 425°F (218°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together all sauce ingredients: soy sauce, honey, rice vinegar, sriracha, minced garlic, ginger, and red pepper flakes. Set aside.
  3. Pat shrimp dry with paper towels and place in a medium bowl. Add half of the prepared sauce to the shrimp and toss to coat. Let marinate while you prep vegetables.
  4. On the prepared baking sheet, toss the bok choy halves and red bell pepper slices with olive oil. Season lightly with salt and pepper. Arrange in a single layer.
  5. Nestle the marinated shrimp among the vegetables on the baking sheet, arranging them in a single layer.
  6. Bake for 8-10 minutes, or until the shrimp are pink, opaque, and cooked through.
  7. Remove from oven. Drizzle the remaining sauce over everything. Garnish with sesame seeds and green onions.
  8. Serve immediately over rice, quinoa, or noodles.

Notes

  • Feel free to adjust the level of spiciness by adding more or less sriracha and red pepper flakes.
  • This dish pairs well with rice, quinoa, or noodles for a complete meal.
