Description

This hearty Slow Cooker Beef Noodle Soup is perfect for a cozy meal.

Ingredients

Scale
  • 2 lbs beef stew meat or chuck roast, cubed
  • 1 can (10 oz) cream of mushroom soup
  • 1 packet onion soup mix
  • 4 cups beef broth (low sodium)
  • 12 oz egg noodles
  • Salt and black pepper to taste

Instructions

  1. Brown the beef (optional but flavorful): Though not required, browning your beef in a skillet over medium-high heat before adding it to the slow cooker adds deeper flavor. Just a quick sear on all sides will do. This step is especially worthwhile if you have a few extra minutes in the morning.

  2. Assemble everything in the slow cooker: Place the beef (browned or raw) into the slow cooker. Add the cream of mushroom soup, onion soup mix, and beef broth. Stir to combine, making sure the meat is fully coated in the mixture.

  3. Let it cook low and slow: Cover and cook on LOW for 7–8 hours, or HIGH for 4–5 hours, until the beef is fork-tender and easy to shred. This is when the magic happens—the flavors deepen and the meat becomes fall-apart delicious.

  4. Add the noodles: About 30–40 minutes before serving, add the egg noodles directly into the slow cooker. Stir them gently into the broth and beef. Continue cooking on HIGH until the noodles are soft and have absorbed the savory juices, about 30 minutes.

  5. Serve warm and enjoy: Taste and adjust seasoning with salt and pepper if needed. Serve the beef and noodles with mashed potatoes, roasted vegetables, or warm rolls.

Notes

  • This soup pairs well with bread rolls for a complete meal.
  • For a vegetable boost, consider adding carrots or peas when cooking.
