Taco Casserole

Description

A delicious and hearty taco casserole perfect for feeding a crowd.


Ingredients

Scale
  • 1 ½ pounds lean ground beef
  • 1 cup green bell pepper, diced
  • 1 cup onion, diced
  • ¼ cup taco seasoning
  • 2/3 cup water
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/8 cup chopped cilantro
  • 1 ½ cups thick salsa
  • 9 taco size tortillas
  • 1 (14 ounce) can refried beans
  • 3 cups shredded Colby jack cheese

Instructions

  1. Preheat the oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray.
  2. Heat a large skillet on medium-high heat and add the ground beef, green peppers, and onion, and cook until browned. Drain any extra fat.
  3. Add in the taco seasoning and water and let simmer 1-2 minutes on low.
  4. Add in the salsa, black beans, and cilantro, and mix until combined. Remove from the heat.
  5. Place two tortillas into the bottom of the baking dish, cut one tortilla in half to fill up the extra space and fully cover the bottom of the dish.
  6. Add 1/3 of the refried beans on top of the tortillas.
  7. Add 1/3 of the taco meat mixture on top of the refried beans, followed by a thin layer of shredded cheese.
  8. Add two more tortillas on top, followed by the refried beans, meat mixture, and cheese.
  9. Repeat one more time and end with two tortillas on top and the remaining shredded cheese.
  10. Cover with aluminum foil and bake for 30 minutes or until hot and bubbly. Remove the foil the last 5 minutes to brown up the cheese a bit.
  11. Add your favorite toppings like tomatoes, olives, jalapenos, avocados, or sour cream and serve!

Notes

  • For extra flavor, you can add sliced jalapenos or chopped tomatoes as toppings before serving.
  • This dish can be made ahead of time and baked just before serving.
