Description

A delicious dish featuring marinated chicken breasts served over avocado rice, perfect for a quick meal.


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 1 cup jasmine rice (or basmati)
  • 2 cups chicken broth
  • 2 pieces avocado, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 4 pieces lime wedges, for garnish

Instructions

  1. Mix honey, lime juice, lime zest, garlic, cumin, salt, and pepper in a mixing bowl. Coat the chicken breasts in the marinade and let sit for 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F.
  3. In a saucepan, bring chicken broth to a boil. Add jasmine rice, cover, and simmer for 15-20 minutes until all liquid is absorbed.
  4. Fluff the cooked rice and fold in chopped cilantro and diced avocado.
  5. Layer avocado rice on a serving platter, top with sliced chicken, and garnish with red onion and lime wedges. Serve immediately.

Notes

  • Let the chicken marinate for at least 30 minutes for best flavor.
  • You can substitute jasmine rice with basmati if preferred.
