- 4 pieces boneless, skinless chicken breasts
- 3 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt to taste
- Pepper to taste
- 1 cup jasmine rice (or basmati)
- 2 cups chicken broth
- 2 pieces avocado, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 4 pieces lime wedges, for garnish
Instructions
- Mix honey, lime juice, lime zest, garlic, cumin, salt, and pepper in a mixing bowl. Coat the chicken breasts in the marinade and let sit for 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F.
- In a saucepan, bring chicken broth to a boil. Add jasmine rice, cover, and simmer for 15-20 minutes until all liquid is absorbed.
- Fluff the cooked rice and fold in chopped cilantro and diced avocado.
- Layer avocado rice on a serving platter, top with sliced chicken, and garnish with red onion and lime wedges. Serve immediately.
Notes
- Let the chicken marinate for at least 30 minutes for best flavor.
- You can substitute jasmine rice with basmati if preferred.
