Description

A refreshing lime vinaigrette perfect for salads and marinades.


Ingredients

  • ¼ cup lime juice (freshly squeezed, approximately 2 limes)
  • 2 cloves garlic (minced)
  • 1 Tablespoon shallot (finely chopped)
  • 2 Tablespoons honey
  • ¼ cup extra virgin olive oil
  • Salt and pepper (to taste)

Instructions

  1. Whisk together lime zest, lime juice, garlic, shallot, and honey in a medium bowl or mason jar.
  2. Slowly pour in olive oil while whisking until all ingredients are combined.
  3. Add salt and pepper to taste.
  4. Store in an airtight container in the fridge. The oil will likely solidify; bring to room temperature before using again.
