A refreshing lime vinaigrette perfect for salads and marinades.
Ingredients

- 1 lime (zested)
- ¼ cup lime juice (freshly squeezed, approximately 2 limes)
- 2 cloves garlic (minced)
- 1 Tablespoon shallot (finely chopped)
- 2 Tablespoons honey
- ¼ cup extra virgin olive oil
- Salt and pepper (to taste)
Instructions
- Whisk together lime zest, lime juice, garlic, shallot, and honey in a medium bowl or mason jar.
- Slowly pour in olive oil while whisking until all ingredients are combined.
- Add salt and pepper to taste.
- Store in an airtight container in the fridge. The oil will likely solidify; bring to room temperature before using again.
