Description
Delicious and fluffy apple cinnamon pancakes, perfect for breakfast.
Ingredients

- 1¼ cups all-purpose flour
- 1 cup rolled oats
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 3 eggs
- 1 cup applesauce
- ¼ cup milk
- 2 tablespoons unsalted butter (melted and slightly cooled, plus additional to grease the pan)
- 1 teaspoon vanilla extract
- ½ cup shredded apple (from about 1 medium apple; you can include the peel and you do not need to squeeze)
Instructions
- Gently stir together the flour, oats, baking powder, cinnamon and salt in a medium bowl.
- Add the eggs, applesauce, butter, vanilla, milk, and shredded apple. Stir to combine.
- Warm a nonstick or cast iron skillet over medium heat. Add a small bit of additional butter, melt, and spread it around the pan.
- Drop 1/4 cupfuls of batter onto the pan and spread out thinly to about 1/4-1/2 inch thick. Cook for about 3 minutes or until you see bubbles on the surface of the pancake. Flip and cook for an additional 2-3 minutes. Continue to cook the rest of the batter.
- Serve warm.
Notes
- These pancakes are best served fresh off the skillet.
- Feel free to add your favorite toppings such as syrup or whipped cream.
