Description
A delicious recipe for grilled sirloin steak and vegetables, marinated to perfection and served on skewers.
Ingredients

- 1 1/2–2 lbs. top sirloin steak
- 1 lb. baby red potatoes (cut into 1 1/2” chunks)
- 2 bell peppers (red, yellow or orange) (cut into 1 1/2” chunks)
- 2 small or 1 large zucchini (cut into 1/4-1/2” slices)
- 1 large red onion (cut into 1 1/2” chunks)
- 1/3 cup extra virgin olive oil
- salt
- pepper
- 1/3 cup reduced sodium soy sauce
- 3 tablespoons balsamic vinegar
- 2 tablespoons lemon juice
- 2 tablespoons brown sugar
- 1 1/2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon pepper
- 1 teaspoon dried basil
- 1 teaspoon dried dill weed
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon ground coriander
- 1/2–1 teaspoon red pepper flakes
Instructions
- Whisk all of the marinade ingredients together in a large bowl or large freezer bag. Remove 1/3 cup to use later for vegetables and basting.
- Add steak to the remaining marinade and turn to coat. Cover and marinate for 2-6 hours in the refrigerator.
- Add potatoes to a large microwave-safe bowl with a tight-fitting lid. Add 3-4 tablespoons of water. Microwave, covered, for 4-5 minutes or just until fork tender; drain.
- Add peppers, onions, 3 tablespoons of reserved marinade, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Toss until evenly coated and refrigerate.
- Soak wooden skewers if using at this time (they require at least 30 minutes).
- When ready to cook, thread steak and veggies onto skewers in desired order.
- Grease and preheat grill to medium-high heat. Grill skewers until lightly charred all over, about 2 minutes per side, basting with remaining marinade halfway through cooking.
- Let rest for 5 minutes before serving.
- Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil for easy clean up. Lightly spray with nonstick cooking spray.
- Evenly space kabobs on baking sheet and bake for 8-10 minutes for medium-rare and 10-12 minutes for medium, turning once.
- Ensure to check the internal temperature of the steak, then let rest for 5 minutes before serving.
