Grilled Sirloin Steak and Vegetable Skewers

Description

A delicious recipe for grilled sirloin steak and vegetables, marinated to perfection and served on skewers.


Ingredients

  • 1 1/22 lbs. top sirloin steak
  • 1 lb. baby red potatoes (cut into 1 1/2” chunks)
  • 2 bell peppers (red, yellow or orange) (cut into 1 1/2” chunks)
  • 2 small or 1 large zucchini (cut into 1/4-1/2” slices)
  • 1 large red onion (cut into 1 1/2” chunks)
  • 1/3 cup extra virgin olive oil
  • salt
  • pepper
  • 1/3 cup reduced sodium soy sauce
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon ground coriander
  • 1/21 teaspoon red pepper flakes

Instructions

  1. Whisk all of the marinade ingredients together in a large bowl or large freezer bag. Remove 1/3 cup to use later for vegetables and basting.
  2. Add steak to the remaining marinade and turn to coat. Cover and marinate for 2-6 hours in the refrigerator.
  3. Add potatoes to a large microwave-safe bowl with a tight-fitting lid. Add 3-4 tablespoons of water. Microwave, covered, for 4-5 minutes or just until fork tender; drain.
  4. Add peppers, onions, 3 tablespoons of reserved marinade, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Toss until evenly coated and refrigerate.
  5. Soak wooden skewers if using at this time (they require at least 30 minutes).
  6. When ready to cook, thread steak and veggies onto skewers in desired order.
  7. Grease and preheat grill to medium-high heat. Grill skewers until lightly charred all over, about 2 minutes per side, basting with remaining marinade halfway through cooking.
  8. Let rest for 5 minutes before serving.
  9. Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil for easy clean up. Lightly spray with nonstick cooking spray.
  10. Evenly space kabobs on baking sheet and bake for 8-10 minutes for medium-rare and 10-12 minutes for medium, turning once.
  11. Ensure to check the internal temperature of the steak, then let rest for 5 minutes before serving.
