Description

This creamy frosting combines the delicious flavors of freeze-dried blueberries and cream cheese, perfect for topping cupcakes or cakes.


Ingredients

Scale
  • 1 cup freeze-dried blueberries
  • 8 ounces cream cheese (I like full fat, softened at room temperature)
  • ¼ cup unsalted butter (½ stick, softened at room temperature)
  • 2 tablespoons honey or powdered sugar
  • 1 teaspoon pure vanilla extract
  • ¼ cup powdered sugar (optional)

Instructions

  1. Place the freeze-dried blueberries into a blender or clean spice grinder. Grind into a fine powder.
  2. Add to a medium bowl with the rest of the ingredients.
  3. Blend well using a handheld electric mixer on high speed to make a fluffy frosting, or stir with a whisk or spatula.
  4. Transfer to a zip-top quart-size bag. Seal. Cut off 1 bottom corner and pipe onto cupcakes. You can also just use a spatula to frost onto a cake or cupcakes.

Notes

  • This frosting can be made ahead of time and stored in the refrigerator.
  • For a sweeter frosting, adjust the amount of powdered sugar to taste.
