Ingredients

Scale
  • 1 cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2430 ladyfingers
  • 1 cup cherry pie filling or fresh cherries
  • Cocoa powder for dusting

  1. In a shallow dish, mix the cooled coffee with coffee liqueur if using. Set aside.
  2. In a large bowl, beat mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and fluffy.
  3. Quickly dip each ladyfinger into the coffee mixture and layer half of them in a 9×9-inch dish.
  4. Spread half of the mascarpone mixture over the ladyfingers and top with half of the cherry filling. Repeat layers.
  5. Cover with plastic wrap and refrigerate for at least 4 hours (or overnight).
  6. Before serving, dust with cocoa powder and cut into squares.
