A delicious grilled chicken recipe served with tzatziki sauce and rice or quinoa.
Ingredients

- 2 chicken breasts marinated in olive oil, lemon juice, salt, and pepper
- 1 cup plain yogurt
- 1/2 cucumber, diced
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 cup cooked rice or quinoa
- 1 tomato, diced
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh herbs (optional, for garnish)
Instructions
- Marinate the chicken in olive oil, lemon juice, salt, and pepper for at least 15 minutes.
- Preheat grill or grill pan and grill the chicken until fully cooked.
- Prepare tzatziki sauce by mixing yogurt, diced cucumber, minced garlic, lemon juice, and salt in a bowl.
- Cook rice or quinoa according to package instructions.
- In serving bowls, layer cooked rice or quinoa, sliced grilled chicken, diced cucumber, and tomato.
- Drizzle with tzatziki sauce and optional fresh herbs before serving.
Notes
- For a more intense flavor, marinate the chicken longer if time allows.
- Feel free to add more vegetables to the serving bowls.
