Description

A delicious grilled chicken recipe served with tzatziki sauce and rice or quinoa.


Ingredients

  • 2 chicken breasts marinated in olive oil, lemon juice, salt, and pepper
  • 1 cup plain yogurt
  • 1/2 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 cup cooked rice or quinoa
  • 1 tomato, diced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh herbs (optional, for garnish)

Instructions

  1. Marinate the chicken in olive oil, lemon juice, salt, and pepper for at least 15 minutes.
  2. Preheat grill or grill pan and grill the chicken until fully cooked.
  3. Prepare tzatziki sauce by mixing yogurt, diced cucumber, minced garlic, lemon juice, and salt in a bowl.
  4. Cook rice or quinoa according to package instructions.
  5. In serving bowls, layer cooked rice or quinoa, sliced grilled chicken, diced cucumber, and tomato.
  6. Drizzle with tzatziki sauce and optional fresh herbs before serving.

Notes

  • For a more intense flavor, marinate the chicken longer if time allows.
  • Feel free to add more vegetables to the serving bowls.
