Description

Delicious brownies topped with a creamy frosting and sprinkled with Andes Peppermint Crunch.


Ingredients

Scale
  • 2 oz unsweetened chocolate (melted)
  • 1/3 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup Andes Peppermint Crunch (divided)
  • 1/4 cup butter (softened)
  • 23 cups powdered sugar
  • 12 Tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350º F. Line or grease well an 8-inch baking dish.
  2. In a mixing bowl stir together melted chocolate and vegetable oil until well combined and smooth.
  3. Beat in eggs and sugar for at least 1 minute until really well incorporated.
  4. Add flour and salt and mix until it is just barely combined. Fold in 3/4 cup of the Andes Peppermint candy.
  5. Spread into prepared baking dish. Bake for 25-30 minutes until a tester comes out mostly clean. Remove from the oven and let cool completely.
  6. To prepare the frosting, beat together butter, powdered sugar, vanilla extract and milk until you get a spreadable consistency. You can adjust the sugar and milk to get the right consistency for you.
  7. Spread the frosting over completely cooled brownies. Sprinkle the reserved peppermint candies over the top.
