Description
Delicious brownies topped with a creamy frosting and sprinkled with Andes Peppermint Crunch.
Ingredients

- 2 oz unsweetened chocolate (melted)
- 1/3 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 3/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup Andes Peppermint Crunch (divided)
- 1/4 cup butter (softened)
- 2–3 cups powdered sugar
- 1–2 Tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350º F. Line or grease well an 8-inch baking dish.
- In a mixing bowl stir together melted chocolate and vegetable oil until well combined and smooth.
- Beat in eggs and sugar for at least 1 minute until really well incorporated.
- Add flour and salt and mix until it is just barely combined. Fold in 3/4 cup of the Andes Peppermint candy.
- Spread into prepared baking dish. Bake for 25-30 minutes until a tester comes out mostly clean. Remove from the oven and let cool completely.
- To prepare the frosting, beat together butter, powdered sugar, vanilla extract and milk until you get a spreadable consistency. You can adjust the sugar and milk to get the right consistency for you.
- Spread the frosting over completely cooled brownies. Sprinkle the reserved peppermint candies over the top.
