A deliciously refreshing slaw salad perfect for any gathering, topped with crunchy Fritos.
Ingredients

- 16 oz coleslaw mix
- 15 oz black beans, rinsed and drained
- 1 ½ cups corn (canned or thawed frozen)
- 1 red bell pepper, finely diced
- 1 cup grape tomatoes, halved (optional)
- 4 green onions, thinly sliced
- ½ cup chopped fresh cilantro
- 1 jalapeño, seeded and minced
- ½ cup mayonnaise
- ½ cup sour cream or plain Greek yogurt
- 3 tablespoons fresh lime juice
- 2 tablespoons adobo sauce
- 1 tablespoon taco seasoning
- 1 teaspoon ground cumin
- 1 teaspoon honey (optional)
- ½ teaspoon kosher salt (plus more to taste)
- ¼ teaspoon black pepper
- 2 to 3 cups Chili Cheese Fritos or tortilla chips
Instructions
- In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), lime juice, adobo sauce, taco seasoning, ground cumin, honey (if using), salt, and pepper until smooth.
- In a large bowl, combine coleslaw mix, black beans, corn, red bell pepper, grape tomatoes (if using), green onions, cilantro, and jalapeño.
- Pour the dressing over the salad and toss to coat evenly.
- Cover and refrigerate for 20 to 30 minutes. Top with crunchy Fritos or tortilla chips just before serving.
Notes
- For added flavor, let the salad sit longer in the refrigerator to let the ingredients meld together.
- If you like it spicy, keep the seeds in the jalapeño.
