Description

Deliciously creamy truffles made with Andes Creme de Menthe baking chips and a hint of peppermint, perfect for any festive occasion.

Ingredients

Scale
  • 1 (10 oz) bag Andes Creme de Menthe baking chips
  • 4 oz cream cheese, softened
  • ½ teaspoon peppermint extract
  • 1 cup powdered sugar
  • 1½ cups semisweet chocolate chips
  • Optional: crushed peppermint candy or cocoa powder, for rolling

Instructions

  1. Melt the Andes Chips: In a microwave-safe bowl, heat the Andes Creme de Menthe baking chips in 30-second intervals, stirring in between until fully melted and smooth. This will be the minty chocolate base of your truffles.
  2. Mix in the Cream Cheese: Allow the melted chocolate to cool slightly, then beat in the softened cream cheese until fully combined. The mixture will begin to take on a thick, mousse-like consistency.
  3. Add Peppermint and Sugar: Stir in the peppermint extract, then gradually add the powdered sugar. Mix until a soft dough forms. It should be pliable but not sticky.
  4. Chill the Mixture: Cover and refrigerate the mixture for about 1 hour, or until firm enough to roll into balls. This step is key for smooth, evenly shaped truffles.
  5. Roll into Balls: Using a spoon or small scoop, portion out about a tablespoon of the mixture and roll into 1-inch balls between your palms. Place on a parchment-lined tray.
  6. Dip in Chocolate: Melt the semisweet chocolate chips in a microwave-safe bowl. Using a fork or dipping tool, dip each truffle ball into the chocolate, letting excess drip off before placing it back on the tray.
  7. Decorate (Optional): While the coating is still wet, sprinkle crushed peppermint or dust lightly with cocoa powder for an extra festive look.
  8. Chill and Serve: Refrigerate the finished truffles until set, about 15–20 minutes. Once firm, transfer to a serving plate or gift box.

Notes

  • Ensure the cream cheese is softened to combine well with the melted chocolate.
  • Chilling the mixture is crucial for rolling into smooth balls.
  • Feel free to experiment with different toppings for variation.
