- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup whole milk
- Zest and juice of 2 fresh lemons
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, milk, lemon zest, and juice until smooth.
- Gently fold the wet ingredients into the dry mix until just combined.
- Carefully add blueberries and fold gently to avoid bursting them.
- Pour the batter into the prepared pan and bake for 55-65 minutes until golden brown and a toothpick comes out clean.
Notes
- Ensure not to overmix the batter for a light and fluffy bread.
- Let the bread cool in the pan for a few minutes before transferring it to a wire rack.
