Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together olive oil, Dijon mustard, yellow mustard, honey, garlic powder, salt, and pepper.
- Add halved baby potatoes to the bowl and toss to coat evenly.
- Spread potatoes out in a single layer on the prepared baking sheet.
- Roast for 30-35 minutes or until golden brown and crispy, stirring halfway through.
- Garnish with chopped parsley before serving, if desired.
