- 8 oz firm tofu, cubed (or your choice of protein like chicken or shrimp)
- 3 tablespoons soy sauce
- 2 tablespoons chili garlic sauce (adjust for spice preference)
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- Sesame seeds (optional, for garnish)
- Additional sliced green onions (optional, for garnish)
Instructions
- Start by gathering all your ingredients. Wash and slice your vegetables, cube the tofu, and have your sauces ready. This makes the cooking process smoother and faster.
- In a large pot of boiling water, add the fresh udon noodles and cook for exactly 2-3 minutes until they are tender but still firm to the bite (al dente). Drain and rinse under cold water to stop the cooking; set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. You’ll know it’s ready when the oil shimmers slightly. Avoid overcrowding the pan with ingredients to ensure everything cooks evenly.
- Add the sliced onion and stir-fry for 2 minutes until it becomes translucent. Then, add the carrots, bell pepper, and broccoli. Cook for an additional 3-4 minutes until the vegetables are crisp-tender. Stir frequently to prevent burning.
- Gently fold in the cubed tofu and sauté for another 3-4 minutes until it’s golden on the edges. Be careful not to break the tofu too much—treat it gently!
- In a small bowl, whisk together the soy sauce, chili garlic sauce, oyster sauce (if using), sesame oil, sugar, rice vinegar, grated ginger, and minced garlic. Pour this mixture over the sautéed vegetables and tofu, stirring well to coat.
- Add the cooked udon noodles to the skillet. Toss everything together for 2-3 minutes until the noodles are heated through and well coated with the sauce. The mixture should be fragrant and vibrant.
- Remove from heat, and garnish with sliced green onions and sesame seeds if desired. Serve immediately, enjoying the delightful blend of flavors and textures.
