Deliciously roasted baby potatoes seasoned with garlic and herbs, perfect as a side dish.

- 2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Wash and scrub the baby potatoes thoroughly, then pat them dry and cut each in half for even roasting.
- In a large bowl, combine olive oil, garlic, salt, pepper, oregano, thyme, and lemon zest. Add potatoes and toss until well coated.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment or grease lightly. Spread potatoes cut-side down in a single layer.
- Roast for 35–40 minutes, flipping halfway through, until crispy and golden brown.
- Remove from the oven and immediately toss with chopped fresh parsley and dill.
- Garnish with extra herbs and serve hot with your favorite dip or as-is.

- Make sure potatoes are evenly sized for consistent cooking.
