- 1½ – 2 pounds chicken breasts (boneless skinless)
- ¼ cup lemon juice
- 2 tablespoons olive oil
- 2–3 cloves garlic (minced)
- ½ teaspoon dried oregano
- ½ teaspoon ground mustard
- salt (to taste)
Instructions
- Clean, trim, and pound chicken to an even thickness. Place in a shallow dish or zip-top bag.
- In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, ground mustard, and salt.
- Pour marinade over the chicken, flipping to coat all sides.
- Cover the dish or seal the bag and refrigerate for at least 2 hours or up to 8 hours.
- Preheat grill to medium-high heat. Grill chicken until cooked through, about 5 to 7 minutes per side or until internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
