A delicious chai spiced custard, perfect for any dessert occasion.

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar (plus extra for caramelizing)
- 6 large egg yolks
- 2 tsp chai spice blend (cinnamon, cardamom, ginger, cloves)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (160°C) and prepare a baking dish or roasting pan to hold your ramekins.
- In a saucepan over medium heat, combine heavy cream and milk. Stir in sugar and chai spice blend until dissolved; bring to a simmer without boiling.
- Whisk egg yolks and vanilla extract in a bowl until pale. Gradually mix in the hot cream mixture while continuously whisking.
- Strain the mixture into another bowl to remove lumps, then pour evenly into ramekins.
- Place ramekins in the prepared baking dish and fill with hot water halfway up the sides of the ramekins.
- Bake for 40-45 minutes until set but still jiggly in the center.
- Allow cooling before refrigerating for at least two hours.
- Once chilled, sprinkle sugar on top of each custard layer and use a kitchen torch to caramelize until golden brown.
Notes
- Make sure not to boil the cream mixture.
- Adjust the baking time based on the size of ramekins used.
