- 4 chicken thighs, boneless and skinless
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 mango, diced
- 2 cups cabbage, shredded
- 1 red bell pepper, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat, around 400°F (200°C). This temperature is ideal for achieving those beautiful grill marks without burning the chicken.
- While the grill is heating, rub the chicken thighs with jerk seasoning and olive oil. Make sure each piece is evenly coated; this will ensure maximum flavor.
- Flip the chicken and grill for an additional 6-7 minutes on the other side. The chicken should be cooked through, reaching an internal temperature of 165°F (75°C). Avoid cutting into the chicken while it’s on the grill, as this loses juices and can lead to dryness.
- While the chicken is grilling, prepare the mango slaw. In a large bowl, combine the diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro. Toss gently to mix; this colorful medley will be the perfect base for your chicken.
- In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and pepper. This creamy honey lime dressing brings everything together, adding a sweet and tangy flavor. Taste and adjust seasoning as needed; you want it to complement the jerk chicken.
- Once the chicken is fully cooked, remove it from the grill and let it rest for a few minutes. This rest period allows the juices to redistribute, keeping the chicken moist.
- Slice the grilled chicken into strips and serve it over the mango slaw. Drizzle with the honey lime cream for an extra burst of flavor, and don’t forget to sprinkle additional cilantro for garnish if you like!
