Description

A delicious cheesy beef and macaroni casserole that combines meatloaf with a creamy noodle topping.


Ingredients

  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 2 lbs lean ground beef
  • 30 Ritz Crackers
  • 2 oz Lipton onion soup mix
  • 2 eggs
  • 3 cups macaroni noodles
  • 2 cups milk
  • 10 oz condensed cheddar cheese soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 350F.
  2. In a medium bowl, mix ketchup and barbecue sauce. Set aside.
  3. In a large bowl, mix ground beef, crushed Ritz Crackers, onion soup mix, and eggs.
  4. Add 1/2 cup of the ketchup-barbecue sauce mixture to the meat, mixing thoroughly.
  5. Press the meatloaf mixture into a greased 9×13 inch baking dish.
  6. Top with remaining ketchup-barbecue sauce mixture.
  7. Bake for 30 minutes.
  8. Meanwhile, cook and drain macaroni noodles.
  9. Mix milk, cheddar soup, salt, pepper, garlic powder, and onion powder until smooth.
  10. Combine noodles and sauce, adding 2 cups of cheese. Stir well.
  11. After baking, layer noodle mixture over meatloaf; top with remaining cheese.
  12. Bake for an additional 17-20 minutes until cheese is golden.

Notes

  • For added flavor, consider using barbecue sauce with a bit of spiciness.
  • This dish can be prepared ahead of time and refrigerated before baking.
