Description
A delicious and moist banana bread made with ripe bananas.

- 3 very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease your mini loaf pan or line with parchment paper strips for easy removal. My favorite pan makes four mini loaves, but any 5-inch loaf molds will work.
- In a large mixing bowl, mash your ripe bananas with a fork until smooth. The darker the peel, the sweeter the banana—don’t toss those spotty ones!
- Add the melted butter to the mashed bananas, followed by the brown sugar, eggs, and vanilla extract. Stir until everything is well combined and smooth.
- Sprinkle in the flour, baking soda, salt, and cinnamon. Stir gently until just combined. If you like texture or a bit of indulgence, fold in chopped walnuts or chocolate chips at this stage.
- Divide the batter evenly among the prepared mini loaf pans, filling each about 2/3 full to allow room for rising.
- Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. The tops should be golden and just slightly cracked.
- Let the mini banana bread loaves cool in the pan for 10 minutes before transferring to a wire rack. They’re delicious warm or at room temperature, with a pat of butter or plain.

- Store banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
- Freezes well; wrap tightly and store in freezer-safe bags for up to 3 months.
