Description

A delicious and moist banana bread made with ripe bananas.


Ingredients

  • 3 very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini loaf pan or line with parchment paper strips for easy removal. My favorite pan makes four mini loaves, but any 5-inch loaf molds will work.
  2. In a large mixing bowl, mash your ripe bananas with a fork until smooth. The darker the peel, the sweeter the banana—don’t toss those spotty ones!
  3. Add the melted butter to the mashed bananas, followed by the brown sugar, eggs, and vanilla extract. Stir until everything is well combined and smooth.
  4. Sprinkle in the flour, baking soda, salt, and cinnamon. Stir gently until just combined. If you like texture or a bit of indulgence, fold in chopped walnuts or chocolate chips at this stage.
  5. Divide the batter evenly among the prepared mini loaf pans, filling each about 2/3 full to allow room for rising.
  6. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. The tops should be golden and just slightly cracked.
  7. Let the mini banana bread loaves cool in the pan for 10 minutes before transferring to a wire rack. They’re delicious warm or at room temperature, with a pat of butter or plain.
