Stuffed Fried Okra

Description

Deliciously stuffed okra, breaded and fried to perfection, served with salsa.


Ingredients

Scale
  • 4 ounces Monterey Jack cheese
  • 1 pound fresh okra (4-inch-long pods)
  • 1 cup flour
  • 1/3 cup Jiffy corn muffin mix
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup beer
  • Vegetable oil
  • Salt
  • Salsa of your choice

Instructions

  1. Cut Monterey Jack cheese into thin sticks.
  2. Cut a lengthwise slit in each okra pod, but not through the ends, and push the seeds aside.
  3. Fill okra pods with cheese sticks, and set aside.
  4. Combine flour and corn muffin mix in a large bowl.
  5. Make a well in the center of the mixture.
  6. Stir together egg, buttermilk, and beer.
  7. Add to dry ingredients, stirring until smooth.
  8. Pour oil to a depth of 3 inches into a deep skillet and heat the oil.
  9. Dip stuffed okra in batter, coating well.
  10. Fry a few at a time, in hot oil until golden.
  11. Drain on paper towels.
  12. Continue frying a few at a time and draining them on paper towels.
  13. Sprinkle with salt and serve immediately with salsa.
