Description

A hearty beef stew perfect for a cozy meal.


Ingredients

  • 2 tablespoons (30ml) olive oil
  • 2 pounds (900g) beef stew meat, cubed
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 4 cups (950ml) beef broth
  • 1 cup (240ml) tomato sauce
  • 2 teaspoons (10g) dried thyme
  • 2 teaspoons (10g) dried rosemary
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 2 tablespoons (30g) all-purpose flour
  • 1 cup (240ml) water

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 5-7 minutes.
  2. Remove beef and set aside. In the same pot, add onion and carrots. Cook until softened, about 5 minutes.
  3. Return beef to the pot. Add potatoes, beef broth, tomato sauce, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  5. In a small bowl, mix flour and water until smooth. Stir into the stew to thicken.
  6. Cook uncovered for an additional 30 minutes until beef is tender and stew is thickened. Serve hot.

  • For a richer flavor, let the stew sit for a few hours or overnight in the refrigerator before serving.
