Description

A delicious roasted whole chicken flavored with herbs and lemon.


Ingredients

  • 1 whole chicken (34 pounds)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary (chopped)
  • 2 tsp fresh thyme (chopped)
  • 1 lemon (halved)
  • 6 whole garlic cloves
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Drizzle olive oil over the chicken, coating it evenly.
  4. Season generously with salt, pepper, paprika, onion powder, and chopped herbs.
  5. Stuff the cavity with lemon halves and garlic cloves.
  6. Roast for about 1 hour, until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10-15 minutes before carving and serving.
