Ingredients

- 1 whole chicken (3–4 pounds)
- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary (chopped)
- 2 tsp fresh thyme (chopped)
- 1 lemon (halved)
- 6 whole garlic cloves
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Drizzle olive oil over the chicken, coating it evenly.
- Season generously with salt, pepper, paprika, onion powder, and chopped herbs.
- Stuff the cavity with lemon halves and garlic cloves.
- Roast for about 1 hour, until the internal temperature reaches 165°F (74°C).
- Let rest for 10-15 minutes before carving and serving.
Notes
- Make sure to check the internal temperature to ensure the chicken is fully cooked.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
