Description

Delicious creamy pistachio bars with a buttery crust.


Ingredients

  • 1 cup Softened Butter
  • 1 cup Sugar
  • 2 large Eggs
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 8 oz Cream Cheese
  • 1 cup Pistachios (finely chopped)
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add one egg, then mix in the all-purpose flour and baking powder until well combined.
  4. Spread this mixture into the bottom of your prepared dish.
  5. In another bowl, use an electric mixer to beat the cream cheese and sugar until smooth.
  6. Add in the eggs one at a time, mixing well after each addition.
  7. Gently fold in the finely chopped pistachios.
  8. Pour the filling over the crust and spread it out evenly.
  9. Bake for 40-45 minutes until golden brown.
  10. Allow the cake to cool slightly before cutting into squares and serve.
