Slow Cooker Chicken with Lime and Soy Sauce

Description

A delicious and easy slow cooker dish featuring chicken breasts cooked with lime juice and soy sauce.


Ingredients

Scale
  • 6 boneless skinless chicken breasts
  • to taste salt and fresh ground pepper
  • 4 large carrots (cut into a few big pieces)
  • 1/4 cup lime juice (about 2 to 3 whole limes)
  • 3 tablespoons soy sauce (or liquid aminos)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 to 3 garlic cloves (minced)
  • 2 tablespoons cornstarch
  • to taste toasted sesame seeds (for garnish)
  • to taste fresh cilantro (for garnish)

Instructions

  1. Assemble. Season chicken breasts with salt and pepper and arrange on the bottom of your slow cooker insert. Arrange carrots over the chicken (optional). Set aside.
  2. Add the sauce. In a small mixing bowl combine lime juice, soy sauce, Worcestershire sauce, rice vinegar, sesame oil, and garlic; whisk until thoroughly combined. Pour over chicken and veggies; close with a lid.
  3. Cook. Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours.
  4. Make a slurry. Spoon 2 tablespoons liquid from the slow cooker into a bowl and whisk cornstarch into the liquid until well combined.
  5. Thicken the sauce. Stir the cornstarch mixture back into the slow cooker. Continue to cook on high until the sauce thickens, about 20 to 30 minutes.
  6. Serve. Garnish chicken with toasted sesame seeds and cilantro. Serve over rice with a side of steamed broccoli.
