- 1 cup water
- 1 cup salted butter
- 1/3 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup salted butter
- 1/4 cup milk
- 1/4 cup unsweetened cocoa powder
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and grease a mini muffin tin.
- In a saucepan, bring water, butter, and cocoa powder to a boil while stirring. Remove from heat.
- In a bowl, whisk together flour, sugar, salt, and baking soda.
- In another bowl, combine eggs, sour cream, and vanilla. Add to the dry ingredients.
- Pour the warm cocoa mixture into the batter and mix until smooth.
- Scoop the batter into the mini muffin tin, filling each about 3/4 full.
- Bake for 10–12 minutes or until a toothpick comes out clean. Let cool slightly before frosting.
- In a saucepan, melt the butter with milk and cocoa powder. Bring to a gentle simmer.
- Remove from heat and whisk in powdered sugar and vanilla until smooth.
- Spoon or pour the warm frosting over each cake bite, letting it drip down the sides.
- Let the frosting set before serving.
Notes
- Frosting can be adjusted to taste; add more powdered sugar for a sweeter taste.
- These cake bites can be stored in an airtight container for up to 3 days.
