Description

These mini chocolate cake bites are rich, moist, and topped with a delicious frosting, perfect for any occasion.


Ingredients

  • 1 cup water
  • 1 cup salted butter
  • 1/3 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup salted butter
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a mini muffin tin.
  2. In a saucepan, bring water, butter, and cocoa powder to a boil while stirring. Remove from heat.
  3. In a bowl, whisk together flour, sugar, salt, and baking soda.
  4. In another bowl, combine eggs, sour cream, and vanilla. Add to the dry ingredients.
  5. Pour the warm cocoa mixture into the batter and mix until smooth.
  6. Scoop the batter into the mini muffin tin, filling each about 3/4 full.
  7. Bake for 10–12 minutes or until a toothpick comes out clean. Let cool slightly before frosting.
  8. In a saucepan, melt the butter with milk and cocoa powder. Bring to a gentle simmer.
  9. Remove from heat and whisk in powdered sugar and vanilla until smooth.
  10. Spoon or pour the warm frosting over each cake bite, letting it drip down the sides.
  11. Let the frosting set before serving.

Notes

  • Frosting can be adjusted to taste; add more powdered sugar for a sweeter taste.
  • These cake bites can be stored in an airtight container for up to 3 days.
