This banana bread is moist, delicious, and perfect for using up ripe bananas.
Ingredients

- 3 very ripe bananas
- ⅓ cup butter, melted
- 1 large egg
- ¾ cup granulated sugar (or brown sugar)
- 1 teaspoon pure vanilla extract
- 1 ½ cups unbleached all-purpose flour
- ½ teaspoon baking soda (or 1 ½ teaspoons baking powder)
- pinch of salt
Instructions
- Preheat the oven to 350°F and grease an 8×4 inch loaf pan.
- In a bowl, mash the ripe bananas and stir in the melted butter until combined.
- Add in the egg, sugar, and vanilla extract, and mix until blended.
- Fold in the flour, baking soda, and salt until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for one hour, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a cooling rack before slicing.
Notes
- Using very ripe bananas ensures the bread is sweet and flavorful.
- Store banana bread in an airtight container for up to a week.
