Description

Ingredients

  • 3 very ripe bananas
  • ⅓ cup butter, melted
  • 1 large egg
  • ¾ cup granulated sugar (or brown sugar)
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • ½ teaspoon baking soda (or 1 ½ teaspoons baking powder)
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F and grease an 8×4 inch loaf pan.
  2. In a bowl, mash the ripe bananas and stir in the melted butter until combined.
  3. Add in the egg, sugar, and vanilla extract, and mix until blended.
  4. Fold in the flour, baking soda, and salt until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for one hour, or until a toothpick inserted comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a cooling rack before slicing.
