Description
A deliciously sweet and crunchy treat with Andes Mints and Rice Chex.
Ingredients

- 1 cup Andes Mints (chopped)
- 1 cup semi-sweet chocolate chips
- 1 tablespoon salted butter
- 7 cups Rice Chex cereal
- 2 cups powdered sugar
- optional chopped mint cookies, Andes mints, mint baking chunks, green M&Ms
Instructions
- Add the chopped Andes Mints, chocolate chips, and butter to a large microwave safe bowl.
- Microwave for 30 seconds, then stir well. Continue heating in 10-15 second increments until smooth. Do not overheat.
- Add the Chex cereal and gently fold until coated in chocolate.
- Add half of the powdered sugar. Shake the bowl to coat the cereal, then add the rest of the powdered sugar.
- Cover the bowl tightly with a lid or foil. Shake until the cereal is fully coated. Break up any clumps and shake again.
- Spread the mixture on parchment or foil and let it cool and set completely.
- Once set, transfer to a serving bowl and fold in any optional mix ins.
Notes
- Make sure to use a large microwave safe bowl as the mixture will expand.
- Let the mixture cool completely before serving for the best texture.
