Ingredients
Scale
- 2 cups Medjool dates, pitted
- 1 cup raw walnuts
- 1/3 cup unsweetened cocoa powder
- 1/4 cup almond flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 tablespoon maple syrup (optional)
- 1/3 cup chopped nuts or dried fruit (optional)
Instructions
- Pit and chop the Medjool dates. Soak in warm water if dry. Line a square baking dish with parchment paper.
- Add walnuts and almond flour to a food processor. Pulse until finely ground.
- Add cocoa powder, vanilla, and salt to the processor and blend until just mixed.
- Add dates gradually, blending until a sticky dough forms. Add maple syrup or water if too dry.
- Fold in any optional mix-ins like chopped nuts or dried fruit.
- Press mixture evenly into the prepared dish. Use the back of a spoon to flatten.
- Chill in the fridge for 1 hour or freeze for 30 minutes until firm.
- Remove from the pan and slice into squares. Serve chilled or at room temperature.
Notes
- If the dates are too dry, soaking them will help soften them for blending.
- These squares can be stored in the refrigerator for up to a week.
