Description

These delicious chocolate date squares are a nutritious treat made with Medjool dates and walnuts.


Ingredients

Scale
  • 2 cups Medjool dates, pitted
  • 1 cup raw walnuts
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon maple syrup (optional)
  • 1/3 cup chopped nuts or dried fruit (optional)

Instructions

  1. Pit and chop the Medjool dates. Soak in warm water if dry. Line a square baking dish with parchment paper.
  2. Add walnuts and almond flour to a food processor. Pulse until finely ground.
  3. Add cocoa powder, vanilla, and salt to the processor and blend until just mixed.
  4. Add dates gradually, blending until a sticky dough forms. Add maple syrup or water if too dry.
  5. Fold in any optional mix-ins like chopped nuts or dried fruit.
  6. Press mixture evenly into the prepared dish. Use the back of a spoon to flatten.
  7. Chill in the fridge for 1 hour or freeze for 30 minutes until firm.
  8. Remove from the pan and slice into squares. Serve chilled or at room temperature.

Notes

  • If the dates are too dry, soaking them will help soften them for blending.
  • These squares can be stored in the refrigerator for up to a week.
