Description

Delicious homemade Yaki Udon Noodles stir-fried with a colorful array of vegetables and chicken.


Ingredients

  • 14 oz udon noodles
  • 2 tablespoons vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup cabbage, shredded
  • 1 carrot, julienned
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 cup cooked chicken breast, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped

Instructions

  1. Prepare the noodles – Bring a pot of water to a boil and cook the udon noodles according to the package instructions. Drain and rinse briefly with warm water to separate the strands. Set them aside while you prepare the stir-fry.
  2. Heat the pan – In a large skillet or wok, heat the vegetable oil over medium-high heat. When the oil is hot, add the sliced onion and cook for about 2 minutes until it softens and becomes slightly translucent.
  3. Add aromatics – Stir in the garlic and fresh ginger. Let them cook for about 30 seconds until fragrant. The kitchen will already start to smell amazing at this point.
  4. Cook the vegetables – Add cabbage, carrot, bell pepper, and mushrooms. Stir-fry for 3–4 minutes until the vegetables are tender but still slightly crisp. The colors should stay bright and vibrant.
  5. Add the protein – Toss in the sliced cooked chicken and stir to warm it through. This adds heartiness to the dish and makes the noodles more filling.
  6. Add noodles and sauce – Add the cooked udon noodles to the pan. Pour in soy sauce, oyster sauce, sugar, and sesame oil. Use tongs or chopsticks to gently toss everything together so the noodles absorb the sauce.
  7. Finish and serve – Continue stir-frying for another 2–3 minutes until the noodles are heated through and glossy. Sprinkle chopped green onions on top before serving.
