Description

A refreshing and colorful pasta salad perfect for any occasion.


Ingredients

  • 8 oz rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper until combined.
  4. In a large bowl, combine cooled pasta with chopped veggies and cilantro.
  5. Pour dressing over the top and gently toss until well coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
