A refreshing and colorful pasta salad perfect for any occasion.
Ingredients

- 8 oz rotini or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup lime juice (freshly squeezed)
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper until combined.
- In a large bowl, combine cooled pasta with chopped veggies and cilantro.
- Pour dressing over the top and gently toss until well coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made ahead of time for added convenience.
- Feel free to add other vegetables or proteins of your choice.
